seafood paella

Simple, for a beginner cook. Predictable

Ingredients:
- 1 cup of paella rice (short-grain rice)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 tomato, chopped
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of saffron threads
- 4 cups of chicken or vegetable broth
- 1/2 pound of shrimp, peeled and deveined
- 1/2 pound of mussels, cleaned and debearded
- 1/2 pound of clams, cleaned
- 1/2 pound of squid, cleaned and sliced into rings
- Salt and pepper to taste
- Olive oil
- Lemon wedges for serving

Instructions:
1. In a paella pan or large skillet, heat some olive oil over medium heat. Add the onion and garlic and sauté until softened.
2. Add the red bell pepper and tomato to the pan and cook for a few minutes until the vegetables are softened.
3. Stir in the smoked paprika and saffron threads, then add the rice to the pan. Cook for a couple of minutes, stirring to coat the rice with the vegetables and spices.
4. Pour in the chicken or vegetable broth and season with salt and pepper. Bring to a simmer and cook for about 15-20 minutes, stirring occasionally, until the rice is almost cooked.
5. Nestle the shrimp, mussels, clams, and squid into the rice mixture. Cover the pan and cook for another 5-10 minutes, or until the seafood is cooked through and the rice is tender.
6. Remove the pan from the heat and let it rest for a few minutes before serving.
7. Serve the seafood paella hot with lemon wedges on the side.
